Rouby Sidarous is the Founder and Managing Director of The LifeGrain Group. With a background in finance and accounting at Ernst & Young, Westpac, and the ATO, Rouby brings deep expertise in financial management, compliance, and operations.
Rouby remains a hands-on leader, overseeing business development, operational strategy, and fiscal stability. Under his leadership, The LifeGrain Group has become a market leader in redefining food and beverage standards in hospitals.
He holds a Bachelor of Business from UTS, a Master’s in Tax Law from UNSW, and is a CPA.
Nora Sidarous is the co-founder of The LifeGrain Group and has led its growth since 2014. With a background in workforce planning and analytics at ING, United Airlines, and BCD Travel, Nora brings a data-driven approach to café management and product development.
At LifeGrain, she shapes the brand’s strategic direction, approves all products for quality and value, and oversees customer experience to ensure consistency and impact. Dedicated to accessible, high-quality food, she prioritises affordability for patients, staff, students, and everyday customers.
Nora holds a Bachelor of Business from the University of Western Sydney and is passionate about elevating dining experiences through thoughtful design.
Michael brings over a decade of hospitality experience, having worked with companies like Thrive and managing his own venture, Vibe Wholefoods.
He excels in multi-site management, startup growth, and operational leadership. Reporting to Cliff, his role focuses on operational excellence, compliance, procedure development and supporting site managers and staff to ensure top-notch customer experiences.
Additionally, Michael holds a Master of Exercise Science from ECU.
With over a decade of experience in hospitality, Jessica has built a career defined by quality, creativity and operational excellence. From the Whitsundays to Melbourne, she has played a key role in the success of iconic venues, including Bills Bondi and Bills Darlinghurst.
Jessica brings deep expertise in catering, menu development and team leadership. She has been instrumental in refining menus and streamlining operations across both Plume Café and LifeGrain, enhancing consistency and customer satisfaction.
Jessica is actively focused on menu rationalization and kitchen efficiency within LifeGrain, while also managing and strengthening key supplier relationships ensuring our food offering remains both high-quality and commercially smart.
Ryan has over 25 years of experience in hospitality, not only in the Japanese/Sushi space, but also in Thai and French cuisine, having done his Diploma in Hospitality at Le Cordon Bleu Culinary College.
He was brought on specifically to develop the Tsubu Sushi brand.
He is the key person for developing Tsubu Sushi’s menu and recipes.
His role extends to brand expansion where he plays a key role in maintaining the integrity and consistency of Tsubu Sushi.
Christine runs LifeGrain Group’s multi-brand marketing engine, driving visibility, growth and engagement across our diverse portfolio spanning from digital transformation to campaign strategy and implementing creative brand development.
With a degree in Communications and a background in media, customer experience and marketing, Christine brings expertise from global brands including Intercontinental Hotels Group, Citibank and Flight Centre’s Independent Travel Group.
