Our founders, entered the café scene in 2014 with a single mission:
to uplift the hospital café experience.
Inspired by their 11-week hospital stay with their premature son, they saw the shortcomings in hospital retail services and were driven to deliver speed, convenience, and quality — because they’ve lived it and truly understand.
Our Experience
We are well-versed in operating campus based cafés. Our venues have ranged from very high-volume to low-volume locations. We have business models, menu solutions, and equipment solutions in place to run venues of different volumes with excellence.
Multiple Brands
Our brand portfolio delivers options for many customers feeling fatigued by a single café operator. We are actively pursuing head lease opportunities and understand the efficiencies a single contact for all retailers can bring for corporate service managers.
Healthy Food & Drink Framework Champions
Our offers are 100% compliant with the NSW Healthy Food Framework. Since auditing began, we have achieved results of 100% compliance. As a result, we have been put forward as a model for other operators to emulate when implementing this framework in their own operations.
High Touch Support
Our Leadership Team is very hands on in every aspect of our stores' operations. This level of support for the cafés means we are continually pushing our operational standards and product offer forward, whilst still being capable of expanding into new facilities.
Rouby Sidarous
Founder & Managing Director
Rouby has been hands-on in café operations since taking on Villiers Street Canteen in 2014, leveraging his extensive accounting experience from Ernst & Young, Westpac, and the Australian Taxation Office.
As Managing Director, he focuses on business leadership, financial stability, and operational direction, supported by his Bachelor of Business, Masters of Tax Law, and CPA credentials.
Nora Sidarous
Founder & Director
Nora, like Rouby, has been in café management since 2014, drawing on her corporate experience with ING, United Airlines, and BCD Travel.
At the heart of the business, she oversees product quality, value, and all brand touchpoints to ensure quality and consistency.
Nora holds a Bachelor of Business from UWS.

LifeGrain
LifeGrain offers a tailored experience promising quick service and affordable prices, whilst never compromising on product quality. We have become known for our freshness: Fresh ingredients and wholesome meal; Fresh onsite food prep and production. LifeGrain is partnered with AllPress Espresso coffee to deliver consistently excellent coffee.
Plume Café
Plume Café is focused on an elevated coffee and food experience.
Offering customers an option to select from a wider and more specialised hot beverage menu, and a unique and varied food menu, with the option to offer an a la carte experience.
Plume ranges our inhouse specialty crafted coffee blend, roasted for us by AllPress Espresso.
Tsubu Sushi
Tsubu Sushi is the newest and most exciting brand to join the LifeGrain family.
With over 30 years experience our Head Chef delivers outstanding sushi and Japanese cuisine.
Tsubu Sushi allows us to offer much needed cuisine options for Hospital staff, whilst allowing Hospital management to deal with a single operator.
